Gluten and Dairy Free Muffins

These are honestly the best tasting gluten and dairy free muffins I have ever tried! You will not be disappointed!


This recipe is super easy and tastes amazing! Add in some chocolate chips, some fruit, or even make them plain vanilla or maybe chocolate - they are so tasty!

I like to keep my recipes short and sweet so here we go:


Directions:

  1. Preheat oven to 425

  2. Mix dry ingredients together

  3. Add in wet ingredients and mix until smooth

  4. Scoop batter into greased muffin tray

  5. Bake at 425 for 10 minutes.

  6. Reduce heat to 350 and bake for about 5 minutes or until toothpick comes out clean.

  7. Let cool, share and enjoy! (Makes 10-12 medium sized muffins)

Ingredients:

1 1/2 cups gluten-free all-purpose flour (I use Bob's Red Mill brand)

1/2 cup almond flour

1/3 cup granulated sugar

1 tbsp baking powder

1/4 tsp salt

1/2 cup coconut oil

1 egg - (vegan option- 1/4 cup mashed banana)

2/3 cup rice milk

1 tbsp maple syrup

1 tsp vanilla extract
