Gluten free, Dairy free Apple Bread

When I was really sick and before I knew I had gastroparesis, my boyfriend came up with this apple bread recipe that is both gluten and dairy free (if you want it to be!).

Prior to knowing of my gp, I thought I may have had a sensitivity to dairy or gluten, so I was free from both of those for around 3-4 months. I am not gluten free anymore, but I am dairy free now. Adjust the recipe to your liking :)



The first thing you want to do is gather all your ingredients, of course (recipe card at bottom of page). Start by preheating the oven to 350 degrees, and greasing whatever pan you choose. This recipe is great as bread or muffins! I usually do bread in a 9x5 pan.


Next, whisk up your eggs and oil in a medium size bowl.


Next you'll add in the vanilla extract, milk of your choice (I use oat milk), sugar (I like to use less sugar than the recipe says, because I am trying to reduce my sugar intake, but do what you think), and lastly the apple sauce*. Mix until it's smooth.


*I use homemade cinnamon apple sauce that my parents make. I am sure store-bought apple sauce will still be good, if anything add in mushed apples to the recipe for more taste!



After that, add in the flour and baking soda. The mix will be lumpy, but try and make it as smooth as you can.

Pour into your pan and smooth out. Bake for near an hour, checking in on it around 35, 45 and 60 minutes in...
