These delicious recipes are perfect for your sweet tooth but with added protein and energy! One recipe is easier to digest than the other, but both are vegan, gluten and oat free!
First: Easy to digest recipe
What's great about this recipe is it's on close to cookie dough, and I was able to just throw some ingredients together to make it delicious!
Ingredients:
- 1 cup almond flour
- 1 1/2 Tbsp coconut flour
- 3 Tbsp coconut oil (melted)
- 3 Tbsp dairy free milk (I used rice milk)
- 1 tsp vanilla extract (or whatever extract you'd like)
- 3 Tbsp maple sugar (or more if you want more sweetness)
- 1/8 tsp Himalayan salt
- small handful of chocolate chips if wanted
Optional for more protein:
- 1 scoop of protein powder (if you do this, add in a bit more milk)
- Tablespoon of nut butter (also add in a bit more milk and stir extra)
Instructions:
In a medium bowl, mix the dry ingredients well, then add in wet ingredients and mix until a smooth dough forms.
Once all mixed, leave in the bowl and store in the fridge until chilled (I left mine in overnight but 20mins-1 hour is fine).
Once chilled, roll into balls and store in an air tight container in the refrigerator. Store for 3-4 days, or refrigerate. (Makes around 10-15 bites)
These are great on their own or with ice cream acting as cookie dough!

Harder to digest but yummy: Not recommended if you have gastroparesis, but Hashimoto's friends, or anyone in general... these are great!
I used the link below as a guide but made it oat and seed free!
Ingredients:
- 1/2 cup natural nut butter (I used almond butter)
- 1/3 cup honey
- 2 cups quinoa flakes
- 1 tsp vanilla extract
- dash of maple syrup
Instructions:
Mix all ingredients well, roll into balls and refrigerate. Keep cool for 3-4 days, or freeze them!
Optional for more protein:
- 1 scoop of protein powder (if you do this, add in a bit more honey/maple syrup or try adding in milk)
- Tablespoon of nut butter (also add in a bit more honey or milk and stir extra)
